Read: Cooking With Beer

Available at your local chain book store in what I like to call the “cheap section,” Cooking With Beer is a book filled with more than 200 recipes that are simple to understand and educate you as you cook! It’s really a great addition to your kitchen if you like trying new dishes, even if you’re not a big beer drinker.

Monday’s blog about Thanksgiving meals made with beer reminded me that I had this book sitting in my kitchen, so I brought it to work today to share some of its pages with you.

Cooking with Beer starts out with a little history and basic brewing knowledge: terms, definitions, and cooking techniques. So if you’re not familiar with beer, no need to worry. This book will tell you everything you need to know!

As you begin your journey into the world of beer-food, there are a few important things to note:

Light beers go well with light food.

Full-flavored beers pair with hearty dishes.

Boiling beer brings out the bitterness of the hops (not recommended).

Flavors are intensified in the cooking process, so use beer you like!

Since it’s football season, here’s a recipe to try out as we near the end of the college season and really get going in the NFL. It’s a perfect dish to serve with tortilla chips while you watch the game!

Beer con Queso Dip

1 16oz. package of shredded Mexican cheese
1 8oz. package of shredded Cheddar cheese
2 tablespoons flour
1 small onion, minced
1 tablespoon butter
1 12oz bottle beer (pale ale or an amber lager)
1/2 cup chopped tomatoes
1/4-1/2 cup chopped jalapeno slices, seeds removed

Toss the cheeses with the flour. Cook the onion in a heavy saucepan with butter over low heat and stir until the onion is transparent. Add the beer, tomatoes and jalapenos together and simmer for 5 minutes. Add the cheese mixture slowly to the beer mixture and stir until the cheese melts. Serve! And enjoy.
