Southern Tier’s fall Pumking has made the news once again! Local student journalist and self-proclaimed beer connoisseur Zack Taylor began a weekly column in UGA’s “Red and Black” to review the latest in great craft beers. This week he chose Pumking for its aroma – sweet scents of vanilla, nutmeg, cinnamon and — of course — pumpkin pie and its taste, which is just as delectable.
If you love bread, and you love Pumking beer, you should combine the two and try this recipe for pumpkin beer bread!
Ingredients for 2 loaves:
4 cups all-purpose flour
2 teaspoons salt
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/8 teaspoon ground allspice
1/2 cup water
1/3 cup ground flaxseed
3/4 cup granulated sugar
1 cup packed brown sugar
2/3 cup melted butter
2/3 cup Pumking beer (at room temperature)
3 large eggs
1 (15-ounce) can pumpkin
Cooking spray
Preparation:
1. Preheat oven to 350°.
2. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour, salt, and next 6 ingredients (through allspice) in a medium bowl; stir with a whisk.
3. Combine 1/2 cup water and flaxseed.
4. Place sugar, melted butter, beer and eggs in a large bowl; beat with a mixer at medium-high speed until well blended. Add flaxseed mixture and pumpkin; beat at low speed just until blended. Add flour mixture; beat just until combined. Divide batter between 2 (9 × 5-inch) loaf pans coated with cooking spray. Bake at 350° for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.
5. Cool 10 minutes in pan on a wire rack; remove from pans. Cool completely on wire rack.
Options:
Add chopped nuts and dried cranberries
